Ingredients
4 Pasture-Raised Organic Eggs
2 cups Organic Spinach
1 tsp Organic Sunflower Oil
Directions
Preheat oven to 350 degrees fahrenheit
In a medium bowl whisk eggs until whites and yolks combine
In a medium saucepan add sunflower oil and heat to medium heat
Add spinach to the pan and cook until wilted. Let cool slightly
After spinach has cooled, add to the egg mixture
Get a muffin pan and rub oil into each muffin compartment. Fill egg mixture about ¾ the way up each muffin compartment
