Ingredients
1 cup Organic Coconut Flour
1/4 cup Unrefined Organic Coconut Oil
1/2 tsp Baking Powder
1/4 cup Organic Pumpkin Puree
1/4 cup Raw Manuka Honey
1 tsp Pure Vanilla Extract
2 Organic Pasture Raised Eggs
2 tbsp All-Natural Peanut Butter
Directions
Preheat the oven to 350 degrees.
Add the coconut flour, baking powder, virgin coconut oil, pumpkin puree, and honey into a large mixing bowl. Blend ingredients together using a hand mixer.
Once the cookie batter is fully blended add the eggs, vanilla extract, and peanut butter. Blend well until the mixture is fully combined.
Scoop out the batter using a large spoon, place onto a non-stick baking pan, and flatten with a fork. Each scoop should be about one tablespoon.
Insert the pan into the oven and bake for 25-30 minutes.
Remove pan from oven and allow cookies to cool before serving.
